Deli meat can fit a gluten-free eating pattern, but the name of the meat alone does not confirm what is in it. Use this list as a starting point, then check each label and serving method.
Deli meats to check first
Plain sliced turkey, chicken, roast beef and pork are useful places to begin. Meat itself does not contain gluten, but deli versions may include seasonings, coatings, binders, glazes or flavourings that do.

Ham, corned beef, pastrami, salami, pepperoni, mortadella and luncheon meat need individual checks rather than assumptions. Recipes vary between producers, so two products with the same general name may have different ingredients.
What to look for on the label
Choose products clearly labelled gluten free where possible, and still read the ingredient and allergen information. Look closely at seasoning blends, marinades, smoke flavourings, starches and coatings, as their sources can differ.

Also check warning statements about shared production equipment or possible traces. Packaging and recipes can change, so review a familiar product again rather than relying on an old food-diary entry.
Take care at the deli counter
A suitable meat can come into contact with crumbs or another product through shared slicers, knives, boards, gloves or display surfaces. Ask whether clean equipment and a freshly opened piece of meat can be used if avoiding cross-contact matters to you.
Pre-packed slices may be easier to verify because the full label stays with the product. At a counter, request the original packaging or written ingredient information rather than depending only on a verbal description.
Track the exact product
Record the producer, product name and portion instead of entering only “deli meat”. Fat, protein, carbohydrate and energy values can differ according to the cut, added ingredients and preparation method.
Weigh slices when practical, as thickness and size vary. If your tracking app does not show the exact product, use the nutrition information from the current pack and create a personal entry rather than choosing a generic match.
