Is It Worth Keeping the Peel on Cucumber?

Cucumber peel is edible and contains nutrients that are reduced when it is removed. Keeping it on is a simple option, although peeling can still make sense in some meals.

What the peel adds

The dark green peel provides fibre, along with small amounts of vitamins, minerals and naturally occurring plant compounds. Because the peel is only one part of the cucumber, the exact contribution depends on the variety, size and how much you eat.

Fibre is not fully broken down during digestion, and cucumber with its peel generally provides more than peeled cucumber. The peel also adds a firmer texture, which can make slices feel more substantial without changing the basic food.

Peel-on and peeled cucumber in your food log

If you track nutrients as well as energy, choose a food entry that matches whether the cucumber was peeled. Database entries can differ, so using the same reliable entry each time helps keep your records consistent.

There is no need to estimate the weight of the peel separately unless you are tracking with particular precision. Weigh the cucumber in the form you eat it, leaving out any ends or peel that you discard.

When peeling may suit the meal

Some cucumber skins are thick, tough or slightly bitter, particularly on larger or more mature cucumbers. Removing all or part of the peel can give soups, dips and finely chopped dishes a smoother texture.

Personal comfort matters too, as the peel may not suit everyone. You can create alternating peeled and unpeeled strips if you want some colour and texture without keeping the full skin.

Preparing cucumber peel safely

Rinse the cucumber under cool running water and rub the surface with clean hands before cutting it. A clean produce brush can help with cucumbers that have a firm or textured surface, and washing before slicing reduces the chance of transferring surface dirt to the inside.

There is no need to use soap or household cleaning products on cucumber. Dry it with a clean cloth or paper towel, then keep the peel on if you enjoy it and it suits the dish.
