French toast con pera e zucchero alla cannella

Fette spesse di brioche immerse in un composto cremoso di uova, fritte fino a doratura e guarnite con tenere fettine di pera e zucchero alla cannella. Veloce, gustoso e molto più speciale di una normale fetta di pane.

Ingredienti

  • 4 thick slices brioche (or sturdy white bread)
  • 2 ripe pears
  • 3 eggs
  • 100 ml whole milk
  • 1 tsp vanilla extract
  • 1 tbsp granulated sugar mixed with 1 tsp cinnamon (cinnamon sugar)
  • Juice of half a lemon
  • A pinch of salt
  • 30 g butter (for frying)
  • 4 tbsp crème fraîche (for serving)

    Slice the pear thinly and drizzle with lemon juice so the slices don’t turn brown.In a wide bowl, beat the eggs with the milk, vanilla extract and a pinch of salt. Mix well.Dip the brioche slices one by one into the egg mixture. Let each slice soak for 20 to 30 seconds per side so the mixture soaks in well.Melt a knob of butter in a frying pan over medium heat. Fry the slices 2 to 3 minutes per side until nicely golden brown. Work in batches and add more butter if the pan gets dry.Fry the pear slices in the same pan for about 2 minutes over high heat until they lightly caramelize. Sprinkle the cinnamon sugar over them halfway through.Place the French toast on a plate, arrange the pear slices on top and add a spoonful of crème fraîche. Optionally sprinkle with extra cinnamon sugar and serve immediately.
