Mix croccante di ceci tostati da sgranocchiare

Ingredienti
- 2 cans (15 oz each) chickpeas, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground cumin
- 1/2 to 3/4 teaspoon fine sea salt, to taste
- 1/4 teaspoon black pepper
- 1 to 2 teaspoons maple syrup or honey (optional, for light caramelization)
- 1 cup small pretzels or pretzel sticks
- 1 cup toasted nuts (almonds, cashews, or peanuts)
- 1/2 cup roasted seeds (pumpkin or sunflower)
- 1/2 cup crunchy add-ins: corn nuts, rice crackers, or baked pita chips
- Optional: 1/4 teaspoon cayenne or 1 teaspoon chili powder for heat
- Optional finishing: 1 teaspoon lemon zest or 1 tablespoon finely chopped rosemary
Preparazione
- 1
Prep the chickpeas: Drain, rinse, and spread on a clean towel. Pat very dry. Remove any loose skins for extra crunch.
- 2
Preheat the oven: Set to 425°F (220°C). Line a large sheet pan with parchment for easy cleanup.
- 3
Season: Toss chickpeas with olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, and maple or honey if using. Coat evenly.
- 4
Roast hot and fast: Spread in a single layer. Roast 20–25 minutes, shaking the pan halfway, until deep golden and crisp at the edges.
- 5
Dry for crunch: Turn the oven off. Crack the door slightly and let the chickpeas sit inside 10–15 minutes to dehydrate further.
- 6
Build the mix: In a large bowl, combine roasted chickpeas with pretzels, nuts, seeds, and crunchy add-ins. Add cayenne for heat if you like.
- 7
Finish: Toss in lemon zest or rosemary for a fresh pop. Taste and adjust salt.
- 8
Cool fully: Let the mix cool completely before storing so it stays crisp.
