  • 8 oz (225g) cream cheese, softened
  • 1/2 cup (115g) unsalted butter, softened
  • 3 cups (340g) powdered sugar
  • 1 tsp (5ml) vanilla extract
  • 1 cup (240ml) heavy whipping cream, chilled
  • 1 cup (30g) sweetened shredded coconut, toasted
  • 1/2 cup (75g) maraschino cherries, halved
  • 100 g fresh pineapple chunks

    Preheat your oven to 350°F (175°C). In a large bowl, whisk together the cake mix, melted butter, eggs, and reserved pineapple juice.
