Insalata di orzo

Nel fine settimana di Halloween alcuni amici di famiglia sono venuti a stare da noi. Emily ha portato questa fantastica insalata di orzo, che non riuscivo a smettere di mangiare. Mentre ci facevamo la pedicure, mi hai spiegato tutti i passaggi e gli ingredienti per prepararla. Domenica sera sono andato subito da Trader Joe’s a comprare tutto. Si prepara molto velocemente. Consiglio vivamente di acquistare i mirtilli rossi arancioni e la feta da Trader Joe’s, ma il resto si trova in qualsiasi supermercato.
Ingredienti
- 1 pound Orzo (cooked, drained)
- 7 ounce Bag of arugula (chopped)
- 3 ounces Crumbled feta cheese with Mediterranean Herbs or the Isreal pasture feta cheese sheeps milk ((yellow and green package, need to drain water, break it up and use about half container. About $8 per container)
- 1 cup Dried cranberries – orange flavored cranberries
- 20 leaves fresh basil leaves (chopped)
- 1/3 cup Olive oil ((to taste))
- salt and pepper ((to taste))
Preparazione

Bring pot of water to a boil. Toss in box of orzo and boil for about 9 minutes until al dente. Drain the water, rinse with cold water until pasta is cold.

Add orzo to big bowl when pasta is cold. Sprinkle in Olive oil salt and pepper to taste.

Rough chop the arugula four times each way and fresh Chop basil In the large bowl add in greens, feta, and orange flavored cranberries.

Additional Salt/pepper/olive oil to taste if need be. Feeds 10-15 people. Lasts about one week. Perfect for potlucks. Can get all ingredients from Trader Joe’s.
