Riso alla greca

Profumato, confortante e meravigliosamente semplice, questo riso alla greca trasforma ingredienti di tutti i giorni in un contorno speciale. Il riso bianco a chicco lungo cuoce lentamente in un brodo saporito arricchito con olio d’oliva, scalogno, aglio, scorza e succo di limone freschi ed erbe fresche.
Ingredienti
- 2 tablespoons olive oil
- 2 shallots (finely diced)
- 1 1/2 cups white long grain rice ((rinsed & strained well))
- 6 cloves garlic (minced or pressed)
- 2 cups chicken broth
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 lemon (zested & juiced)
- 2 tablespoons chopped fresh parsley ((flat-leaf parsley))
- 2 tablespoons chopped fresh dill

In a saucepan, over medium heat, heat the olive oil. Add the shallots and cook until they soften.

Stir in the rice and garlic, and cook for another 1 minute, while stirring constantly.

Add in the chicken broth, salt, and pepper. Bring to a boil. Once boiling, cover the pan, and reduce the heat to low. Let simmer for 18-20 minutes or until the rice is soft and tender.

Fluff the rice with a fork and stir in the lemon zest, lemon juice, parsley, and dill. Serve and enjoy!
