Riso fresco al coriandolo e lime

Questo riso fresco fatto in casa al coriandolo e lime è ricco di sapore e colore. La mia versione è un po’ diversa dall’originale, ma fidati! La salsa verde brillante, preparata con ingredienti freschi, viene frullata fino a ottenere una consistenza liscia e poi mescolata al riso cotto. Questo contorno sano si può preparare in anticipo e persino congelare per un massimo di tre mesi.
Ingredienti
- 4-5 cups cooked rice, I used two 10 ounce bags of frozen rice
- 1/4 cup extra virgin olive oil
- 1/4 cup freshly squeezed lime juice
- 1/2 cup packed cilantro, or about one large bunch
- 2-3 cloves garlic, roughly chopped
- 1 1/2 teaspoons pure maple syrup, or honey
- 1/2 teaspoon dijon mustard (optional)
- 1/4 teaspoon ground cumin
- 1/2 teaspoon salt, or more to taste

Add all the cilantro lime dressing ingredients to a blender and blend until smooth, 1-2 minutes. Give the dressing a quick taste and adjust flavorings as needed.

Add the cooked rice into a large bowl and then pour the cilantro lime dressing over. Use a large spoon to mix together until completely combined. Rice can be served immediately or stored in the refrigerator until ready to enjoy.
