Saltimbocca alla romana

I saltimbocca alla romana sono una delle specialità più famose della cucina tradizionale laziale. Questa ricetta è, insieme agli spaghetti alla carbonara e alla pasta all’Amatriciana, uno dei simboli della cucina romana nel mondo. Sottili fettine di vitello, tagliate in piccoli pezzi, guarnite con una fetta di prosciutto e una foglia di salvia. Una ricetta molto semplice, deliziosa e gustosa.
Ingredienti
- 6 slices veal scallops
- 6 slices Parma ham
- 6 fresh sage leaves
- 1 tablespoon olive oil
- 3 tablespoons butter
- 1/3 cup dry white wine
- 1/4 cup all purpose flour
- salt (- to taste)
- pepper (- to taste)
