Gli strozzapreti sono un tipo di pasta diffuso in tutta Italia, soprattutto nelle regioni del Nord e del Centro. La loro origine risale alla tradizione romagnola. Come per molte ricette regionali italiane, ne esistono diverse varianti locali. Quella che vi propongo è la versione più comune dell’Emilia-Romagna. Gli strozzapreti si caratterizzano per la forma attorcigliata, simile a una corda. L’impasto si prepara senza uova e richiede solo due semplici ingredienti: farina e acqua. Si tratta di lunghi filoncini di pasta arrotolati a mano, attorcigliati e tagliati in pezzi corti di circa 7–8 cm.

  • 200 ml water (- 3/4 cup +1 tablespoon )
  • 1/3 teaspoon fine salt (- optional)

    roll out: After resting, lightly flour your work surface and roll out the dough with a rolling pin until it’s about 3 mm (⅛ inch) thick.

    cut: Then, using a smooth-bladed knife, cut long strips about 1.5 cm (½ inch) wide.
