Maroulosalata (insalata greca di lattuga)

La maroulosalata è una vivace insalata greca che unisce lattuga romana croccante, aneto fresco e feta dal gusto deciso. Si condisce con una vinaigrette dal gusto intenso a base di limone, olio d’oliva e aglio. Perfetta come contorno o pasto leggero con pollo alla griglia o frutti di mare, è pronta in pochi minuti.
Ingredienti
- 2 Romaine Lettuce Hearts (thinly sliced)
- 4 Spring Onions
- 1/2 cup fresh chopped Dill
- 1/4 cup fresh chopped Parsley
- 4 oz (100g) Greek Feta Cheese
- 1/4 cup Extra Virgin Olive Oil
- 2 tablespoons Lemon Juice (fresh squeezed is best)
- 1 Garlic Clove (minced)
- Salt and Pepper to taste

Prepare Lettuce - wash and dry Romaine Lettuce. Best to spin in a Salad Spinner to ensure it's dry. Stack leaves and thinly slice into ribbons - about ¼" thick.

Chop Greens - Thinly slice Green Onions, Dill and Parsley.

Make Dressing - in a small jar with lid, pour Olive Oil, Lemon Juice, Garlic, Salt and Pepper. Vigorously shake the jar to mix togther.

Assemble Salad - in a large bowl, combine sliced Romaine Lettuce, Green Onions, Dill and Parsley. Pour dressing over the salad and gently toss.

Add Feta - sprinkle crumbled Greek Feta over the salad. (can toss through or leave on top)

Serve - adjust seasoning or Lemon Juice if needed. Serve Immediately as a side dish or alongside Chicken Souvlaki or Grilled Shrimp.
