Riso saltato all’aglio (sinangag)

Il sinangag, o riso all’aglio filippino, è perfetto per utilizzare il riso avanzato. Ti mostrerò gli ingredienti e le tecniche per rendere ancora migliore questo piatto classico. I chicchi morbidi e sgranati, insaporiti dall’olio all’aglio, sono arricchiti da una generosa quantità di aglio caramellato.
Ingredienti
- 300 grams cooked long grain rice ((about 2 cups))
- 2 tablespoons olive oil
- 20 grams garlic ((3 large cloves, minced))
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
Preparazione

Crumble rice.: Use your hands to break up any clumps in the 300 grams cooked long grain rice.

Fry garlic.: In a large frying pan, add the 2 tablespoons olive oil and 20 grams garlic and heat over medium-high heat, stirring regularly to ensure even browning. Fry the garlic until most of the sizzling subsides and the garlic is a golden brown color.

Remove some garlic.: Remove half of the garlic from the pan, leaving the oil behind.

Add rice.: Add the rice and toss to coat evenly with the oil and garlic.

Stir fry.: Stir-fry the rice until it's heated through. Season with 1/4 teaspoon salt and 1/4 teaspoon white pepper to taste.

Serve.: Serve the Sinangag hot and garnish with the reserved garlic. You can also top with some scallions for color.
