Kotopoulo kokinisto: pollo e patate arrosto al pomodoro in un’unica teglia

Il kokinisto è un metodo di cottura greco molto diffuso. Kokino significa «rosso», quindi il kokinisto è una salsa rossa a base di pomodori, cipolle, aglio ed erbe aromatiche. Ci si può cuocere qualsiasi cosa per creare un pasto straordinario. Anche delle semplici verdure cotte o arrostite in questa salsa diventano ancora più buone. Amo questo piatto in particolare perché basta mettere letteralmente tutti gli ingredienti in una teglia, mescolarli e cuocerli finché diventano teneri. Fa tutto il forno, perciò è perfetto per una sera feriale piena di impegni. Ho aggiunto la harissa, una pasta a base di peperoni rossi arrostiti, aglio e spezie. Se non la trovate, potete sostituirla con peperoni rossi arrostiti in barattolo. Frullateli con i pomodori e vi piacerà il tocco dolce e affumicato che daranno al piatto.
