  • 1/2 lb protein of choice (chicken, shrimp, pork, tofu, deli meat, or leftover cooked protein), diced into bite-sized pieces
  • 2–3 tablespoons cooking oil or fat of choice, divided
  • 1 cup frozen mixed vegetables (any blend works)
  • 1 teaspoon minced garlic
  • 2 eggs
  • 2 cups cooked rice (cold, leftover rice works best)
  • 2 tablespoons soy sauce or tamari (optional)
  • Salt and pepper, to taste
