  • 1/4 cup water
  • 3 tablespoons extra virgin olive oil (plus more for serving)
  • 1 teaspoon finely chopped or grated fresh garlic
  • 1/4-1/2 teaspoon crushed red chili (to taste)
  • 2 tablespoons grated Pecorino Romano cheese (or Parmesan cheese)
