SUGLI INVOLTINI DI LATTUGA: gli involtini di lattuga sono un’ottima alternativa ai sandwich, per così dire senza pane. Sebbene siano tradizionali in tutta la cucina del Sud-est asiatico, sono presenti da tempo anche in Occidente, già dalla fine del XIX secolo negli Stati Uniti e nel Regno Unito.

Ingredienti

  • 4 large (tender Romaine lettuce leaves)
  • 1 cup shredded cabbage
  • 1/2 cup shredded purple cabbage
  • 1 large carrot (shredded)
  • 1 cup chopped arugula (optional)
  • 2 pickled pepperoncini peppers (or more, to taste. Seeded and julienned)
  • 8 cherry or teardrop tomatoes (halved or quartered lengthwise)
  • 2 Tbsp chopped fresh oregano
  • 2 Tbsp chopped fresh mint
  • For the Dressing
  • 2 tsp hot mustard powder
  • 2 Tbsp Greek yogurt
  • Grated zest of 1 lemon
  • 1 - 2 Tbsp lemon juice (to taste)
  • 2 Tbsp extra virgin Greek olive oil
  • Sea salt to taste
  • Greek Yogurt (optional, to serve)

Preparazione

    Combine the shredded cabbages, arugula,if using, grated carrot, pepperoncini, tomatoes, and herbs in a mixing bowl. Season with a little salt.

    Whisk together all the dressing ingredients and stir it into the salad filling.

    Place the Romaine lettuce leaves in front of you and place a quarter of the salad on each of the leaves. Roll it up like a wrap, tucking in the ends so that the filling doesn’t fall out. Serve, with a small bowl of Greek yogurt on the side if you like.
