Ingredienti

  • 1 pound fresh spinach
  • 6 tablespoons butter
  • 1/4 cup all-purpose flour
  • 3 tablespoons chopped yellow onion
  • 1 small bay leaf
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups whole milk
  • Optional ingredient:
  • 2 tablespoons softened butter

Preparazione

    Wash the spinach and remove the stems. Set it aside.

    Bring a large pot of water to a boil.

    Meanwhile, prepare a large bowl of ice water.

    Place the spinach in the boiling water and cook for 1 minute.

    Drain the spinach and submerge it in the ice bath to stop further cooking.

    Drain the spinach again and squeeze out as much water as you can.
