Creamy Baked Feta Pasta

Ingredienti
- 1 block feta cheese (about 200g (full-fat, not crumbled))
- 400 g Roma tomatoes (about 2 cups)
- 1 boneless skinless chicken breast ( cut into bite sized cubes)
- 1 to 2 tablespoons olive oil (plus more for drizzling)
- 1/2 teaspoon Salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 teaspoon chicken seasoning
- 1 teaspoon dried chili flakes (optional)
- 1/2 teaspoon cayenne pepper (optional)
- 250 g pasta (your favorite)

Preheat your oven to 400°F (200°C). Grab a medium baking dish no need to line it.

Add the Roma tomatoes and cubed chicken breast to the baking dish.

Season the chicken with salt, thyme, garlic and onion powder, chicken seasoning, chili flakes, and cayenne (if using). Add 1–2 tablespoons of olive oil and mix to coat everything evenly.

Make a space in the center of the dish and place the block of feta cheese.

Drizzle olive oil generously over the entire dish.

Bake uncovered for 30 to 40 minutes, until the chicken is cooked through, the tomatoes have softened.

While it bakes, cook the pasta in salted boiling water until cooked(10-12 minutes).

Drain and set aside, reserve a splash of the pasta water.

Once baked, mash the feta and tomatoes, with a fork or spoon to form a creamy, saucy base.

Add the cooked pasta and stir until well coated. Use reserved pasta water as needed to loosen the sauce.

Stir in spinach or basil if using.
