Il mio metodo infallibile per ottenere ogni volta funghi cotti alla perfezione e ben dorati. Aggiungere acqua al composto fa collassare le sacche d’aria nei funghi, rendendo le fette più flosce e dense. Sì, mi rendo conto che sembra una contraddizione, ma non lo è. Questi funghi saltati sono deliziosi da soli, ma sono anche la base di altri piatti, soprattutto di quelli senza carne. Questa ricetta è apparsa per la prima volta nella seconda stagione di Good Eats: Reloaded.

Ingredienti

  • 1 pound button or cremini mushrooms, sliced
  • 1/3 cup water
  • 2 tablespoons unsalted butter
  • 1 tablespoon chopped fresh parsley or other fresh herb of your choice, such as tarragon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

    Heat an 11-inch, high-sided sauté pan over high heat for 45 seconds. Add the mushrooms and water and cook until the mushrooms collapse, 2 to 4 minutes, then add the butter. Cook, stirring occasionally, until browned, 7 to 10 minutes. Remove from the heat and stir in the parsley, salt, and pepper. Transfer to a bowl and serve.
