Pan-Roasted Pork Tenderloin & Vegetables with Apple Cider Glaze

This main course combines the savory taste of pork with sweet apples for classic complementary flavors.

📝 Ingredients

  • 1 tablespoon olive oil
  • 1 8-ounce pork tenderloin
  • Salt (to taste)
  • Black pepper (to taste)
  • 3 carrots (peeled and cut into pieces)
  • 2 apples (cut into wedges)
  • 4 baby bliss potatoes (halved)
  • 1 leek (cleaned and halved)
  • 3 cups apple cider
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar (can sub coconut sugar for paleo)

👨‍🍳 Instructions

  1. 1Preheat your oven to 400ºF.
  2. 2Heat an oven-safe saute pan over medium-high heat. Add the olive oil and tilt to coat the pan. Season the pork tenderloin with salt and pepper on all sides and then add it to your saute pan. Sear it on all sides until brown.
  3. 3Add the carrots, apples, potatoes, and leek. Reduce the heat to medium and cook for 3 minutes, or until the vegetables have some color.
  4. 4Deglaze the pan with the apple cider, apple cider vinegar and brown sugar.
  5. 5Put the pan in the oven and let the pork and vegetables roast for 15 minutes.
  6. 6Remove the pork from pan and let it rest on a cutting board.
  7. 7Put the saute pan with vegetables and liquid back in oven for 3 minutes, or until the liquid is reduced and syrupy and the vegetables are well glazed.
  8. 8Slice the cooked pork and plate. Serve with the glazed vegetables and pour any remaining pan drippings over the meat.
