Veggie Frittata
How to make Veggie Frittata
Ingredients
- 10 eggs
- Around 2 cups chopped veggies (red & yellow bell pepper, zucchini, carrots, asparagus, onion, cherry tomatoes.. or any other veggie you like)
- 1/4 cup greek yogurt
- 1/2 cup shredded mozzarella
- 1 tbsp chopped fresh herbs (I used rosemary and thyme)
- 1/4 tsp each dried oregano, paprika, onion powder, garlic powder
- 1/2 tsp each salt & pepper
- Feta cheese for garnish
Instructions
- 1
--- Steps ---
- 2
Start by chopping all your veggies of choice. In a separate bowl, whisk eggs, greek yogurt, cheese, herbs and seasoning until everything is combined.
- 3
Butter a baking dish or individual gratin dishes and spoon the chopped veggies in each so they form one layer.
- 4
Using a ladle, pour some of the egg mix over the veggies in each gratin dish (or just pour them in the big baking dish if using).
- 5
Top them with chopped asparagus and sprinkle some more cheese. Bake in a preheated oven on 200C for 20-25 min or until the eggs are fully cooked.
- 6
You will notice the eggs will rise, but they will go back down a few minutes after you remove from the heat. Serve right away with crumbled feta and enjoy!
