Fluffy pancakes with fresh berries and honey

Light, thick pancakes with fresh berries and a drizzle of honey. This is the breakfast you'll want to make every weekend.
Ingredients
- 150 g self-raising flour
- 1 tsp baking powder
- 1 tbsp sugar
- Pinch of salt
- 1 egg
- 150 ml whole milk
- 2 tbsp melted butter, plus extra for the pan
- 150 g fresh berries (blueberries, raspberries or strawberries)
- 2 tbsp honey

Put the flour, baking powder, sugar and salt in a large bowl and give them a quick mix.In a separate bowl, whisk the egg together with the milk and the melted butter.Pour the wet mixture into the dry ingredients and stir gently until you have a smooth batter. Don't overmix — a few lumps are fine and actually help keep them airy.Heat a frying pan over medium heat and lightly grease it with butter or a neutral oil.Spoon a generous tablespoon of batter into the pan for each pancake. Cook them for 2 to 3 minutes until bubbles appear on the surface and the edges look set.Carefully flip the pancakes and cook for another 1 to 2 minutes until golden brown.Stack the pancakes on a plate and scatter the fresh berries on top. Finish with a generous drizzle of honey and serve immediately.
