Quick wrap with hummus, roasted vegetables and feta

A tasty wrap full of color and flavor, ready in a quarter of an hour. Perfect for a quick lunch or a light dinner.
Ingredients
- 4 large wraps
- 200 g hummus (store-bought or homemade)
- 1 zucchini
- 1 red bell pepper
- 1 red onion
- 100 g feta cheese
- 1 handful of arugula
- Zest of 1 lemon
- 2 tbsp olive oil
- Salt, pepper and cumin to taste

Cut the zucchini, bell pepper and red onion into thin strips or evenly sized cubes so everything cooks evenly.Heat a drizzle of olive oil in a grill pan or frying pan over high heat. Add the vegetables and cook for 5 to 6 minutes, until they’re tender and lightly browned at the edges. Season with salt, pepper and a pinch of cumin.Warm the wraps briefly in a dry frying pan (30 seconds per side) or 20 seconds in the microwave, wrapped in a damp paper towel.Spread a generous layer of hummus on each wrap. Divide the roasted vegetables over them and crumble the feta on top.Add a handful of arugula and grate some lemon zest over for a fresh touch. Roll the wrap tightly, cut it diagonally in half and serve immediately.
