These quesadillas with creamy avocado and smoked chicken are quick to make and always hit the spot. Perfect for a weeknight dinner or an easy lunch.

📝 Ingredients

  • 2 large tortilla wraps
  • 1 ripe avocado
  • 150 g smoked chicken breast (ready-to-eat)
  • 80 g grated aged cheese or cheddar
  • 1 tbsp lime juice
  • Salt and pepper to taste
  • 2 tbsp sour cream (for serving)
  • Optional: fresh cilantro or salsa

👨‍🍳 Instructions

  1. 1Cut the avocado in half, remove the pit and scoop out the flesh. Roughly mash it with a fork and season with lime juice, salt and pepper.Shred the smoked chicken into thin strips using two forks.Place a tortilla on a clean work surface. Spread avocado over half of it, distribute the chicken strips on top and generously sprinkle with grated cheese. Fold the tortilla in half.Heat a frying pan over medium heat without oil. Place the folded tortilla in the pan and cook 2 to 3 minutes per side, until golden brown and crispy and the cheese has melted.Remove the quesadilla from the pan and let it rest for 1 minute. Cut into wedges and serve immediately with sour cream and, if you like, a spoonful of salsa or some fresh cilantro.
