Onion gravy

Ingredients
- Olive oil: 2 tbsp
- Red onion: 3. thinly sliced
- Garlic cloves: 2. finely chopped
- Fresh thyme leaves: 1 tsp
- Plain flour: 1 tbsp
- Red wine: 150ml
- Balsamic vinegar: 1 tbsp
- Beef stock: 500ml
- Dijon mustard: 1 tsp
- Worcestershire sauce: 1 tsp
- Salt: to taste
- Black pepper: to taste

Heat the olive oil in a large saucepan over low heat. Add the thinly sliced red onions and cook gently for 20 minutes,stirring occasionally,until caramelised.

Stir in the finely chopped garlic cloves and fresh thyme leaves and cook for 1 minute. Add the plain flour and stir to combine for a further minute,until fragrant.

Deglaze the pan with the red wine and simmer for 5 minutes until reduced by half. Add the balsamic vinegar to the pan,then gradually pour in the beef stock. Whisk constantly to prevent lumps forming.

Add the Dijon mustard and Worcestershire sauce. Simmer for 20 minutes,stirring occasionally until thickened and glossy. Season to taste with salt and black pepper.
