How to make Focaccia (Fugassa)
📝 Ingredients
- 1 tbsp instant dried yeast
- 1 tsp sugar
- 1 cup warm water (not hot)
- 2 & 1/2 cup strong bread or AP flour
- 3/4 tsp flaky sea salt (plus more to sprinkle before baking)
- 1 tbsp extra virgin olive oil (plus extra to grease mixing bowl & baking tray plus drizzling on top before baking)
- 1 tsp dried rosemary (finely chopped)
- 1 tsp dried thyme (finely chopped)
- 1 tsp garlic powder
- 1/8 tsp red chilli flakes (optional)
- olives
- bell peppers
- cheese (cubed or grated)
- tomatoes (fresh or sundried)
👨🍳 Instructions

- 2In the bowl of your stand mixer, add yeast, sugar & warm water, set aside for 15 mins.
- 3Add the rest of the ingredients, mix using dough attachment for 8 mins or until dough does not stick to the sides of the bowl (add flour or water, tsp by tsp, if needed)
- 4Move dough to one side, lightly grease bowl, cover & rest dough for 30 mins until it doubles in size (longer time needed during colder winter months)
- 5Punch lightly to deflate, tip dough onto greased baking tray, stretch to fill, press fingers into dough to make dimples.
- 6Drizzle olive oil, sprinkle salt & add additional toppings (if desired) before baking in a 200 degree C oven for 25-30 mins or until golden brown.
