Ingredients

  • 750 g baby potatoes cut in bite sized pieces
  • 1 tbsp olive oil
  • Coarse salt
  • 1 garlic clove minced
  • 2 tbsp fresh coriander minced
  • 1 tsp paprika
  • 1 tsp cracked black pepper
  • Sprinkle of cayenne to liking

    1- Place the chopped baby potatoes in a bowl and drizzle 1/2 tbsp of olive oil and a generous sprinkle of salt. Toss to coat and place on a baking sheet making sure they don’t overlap. Place in a preheated oven on 200 degrees for 40 minutes or until they’re golden.

    2- While the potatoes cook, prepare the sauce. Heat 1/2 tbsp of olive oil in a skillet on medium heat and cook the garlic for 30 seconds until fragrant. Add the coriander and cook for another 30 seconds while stirring. Add in paprika, black pepper and cayenne, stir and cook for one more minute. Once the potatoes are done, add them in and toss to coat completely with the sauce. Serve warm and enjoy!
