Dairy-Free Veggie Cream Cheese

This delicious veggie-spiked spread can be pureed until smooth or left a bit chunky. We prefer it chunky-style. Prep the vegetables while the cashews soak for a quick and efficient recipe.
Ingredients
- 1/4 cup raw cashews
- 1/4 cup small cauliflower florets
- 2 tablespoons dairy-free cream cheese alternative
- 1/2 teaspoon kosher salt (or to taste)
- 1/2 small carrot (peeled and diced)
- 1 radish (diced)
- 2 green onions (thinly sliced)

Place the cashews in a small bowl, and cover with hot water, about an inch above the cashews. Let the cashews soak for 30 minutes, and then drain.

Put the cashews, cauliflower, cream cheese alternative, and salt in your food processor or a small blender and process until smooth.

Add the carrot, radish, and green onion, and pulse until it reaches your desired texture.

Store this cream cheese alternative in an airtight container in the refrigerator for up to 1 week, depending on the freshness of your vegetables. The veggies might release a little water - just stir it before use.
