Ingredients

  • 1 tbsp olive oil
  • 1 cup onion (finely diced)
  • 4 cloves garlic (minced)
  • 2 tsp dried thyme
  • 1 tsp salt (to taste)
  • 1/2 tsp freshly ground black pepper
  • 2 cups brown rice (washed till water runs clear & drained)
  • 4 cups vegetable stock or water
  • 1 cup fresh parsley (chopped)
  • 2 tbsp olive oil (divided)
  • 500 g fresh mushrooms of choice (sliced)
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper

    Heat olive oil in a large pan over medium high heat, add onions & cook until translucent.

    Add garlic, thyme, salt & pepper, stir for 30 secs.

    Add rice & stir continuously for 1 min.

    Add vegetable broth, bring to a boil, cover & reduce heat to low.

    Cook until all of the liquid is absorbed (abt 35 mins)

    Meanwhile, in a separate pan, heat olive oil over high heat, add mushrooms in 2 batches (don't overcrowd pan) & cook until they start to brown (abt 5 mins)

    Add salt & pepper, stir well & remove from heat.

    When rice is already cooked, add mushrooms & stir well.

    Turn off the heat, add parsley, stir, taste to adjust seasoning & transfer to serving plates.

    Garnish with more black pepper or red chilli flakes.
