Ingredients
- Spice Paste
- 1/2 cup dried chillies (rehydrated)
- 1 large onion
- 5 cloves garlic
- 2 lemongrass (white parts only)
- 2 inch galangal (or 2 inch ginger 1 tsp lemon juice)
- 1 inch belacan (shrimp paste)
- 2 tbsp oil
- 3 tbsp tamarind juice
- 1 tsp coconut palm sugar
- 1/2 tsp salt (to taste)
- 1 cup prawns
- 1 cup tempe (cut into 1 inch cubes)
- 2 cups tofu (cut into 1 inch cubes)
- 1 cup french or long beans (cut into 2 inch pieces)
- 1 cup carrot (cut into 2 inch pieces)
- 2 fresh red chillies (sliced into 2 inch pieces)

Add all the ingredients for the spice paste into a blender or food processor & process into a fine paste.

Add enough oil in a wok to shallow or deep fry tempe & tofu, set aside.

Remove & leave only 2 tbsp of oil in the wok, heat on medium high.

Add spice paste, fry till fragrant, stir often to avoid burning (abt 20 mins)

Add tamarind juice, sugar & salt, cook for another 10 mins.

Add prawns, sauté for 3 mins or until they are almost fully cooked.

Add the rest of the proteins & vegetables, stir well to coat everything in the spice paste & cook for 5 mins.

Taste to adjust seasoning & serve with rice.
