How to make Baked Falafel

Ingredients

  • 2 cups dried chickpeas (or 4 cups cooked)
  • Parsley leaves (around 50g)
  • Coriander leaves (around 50g)
  • 1 onion
  • 2 garlic cloves
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1 tsp each Ground cumin, black pepper
  • Olive oil for brushing

    Soak the chickpeas overnight.

    Place in a food processor along with the roughly chopped parsley, coriander, onion and garlic.

    Blend until you get a crumbled texture. Add all the seasoning, along with the baking powder and mix by hand.

    Shape the falafel balls by hand into the size you prefer (if the mix is too dry and falling apart, add water.

    If too mushy, add flour). Place them on a baking sheet, brush with olive oil and bake for 15-20 minutes on 240 degrees (you can broil the last few minutes until they turn brown).

    Enjoy with veggies and tahini dip!

    N.B. Canned chickpeas will not work, you have to use dry or else the mix will have the wrong texture.
