Ingredients
- Potatoes: 23 oz
- Butter : 0.5 oz
- All purpose flour: 6 oz
- Scallions: 4. sliced
- Chives : 1 tbsp. chopped
- Salt: to taste
- Black pepper: to taste
- Olive oil: 4 tbsp

Peel and chop the potatoes into even cubes. Cook in a large pan of salted boiling water for 15 minutes until fork tender. Drain and leave to dry.

Warm the milk and butter in a pan over a low heat. Add the potatoes to the pan and mash until smooth. Leave to cool.

Once the mash has cooled,stir the all-purpose flour into the mash. Mix in the sliced scallions and chopped chives. Season with salt and black pepper.

Roll the potato mixture into 12 balls,and flatten slightly. Heat the olive oil in a frying pan over a medium heat and fry the potato balls for 3 minutes on each side. Whilst cooking use a spatula to press the balls to flatten them and remove from the pan once golden. Serve hot.
