Italian meatloaf is a fantastic way to bring all the family together over a hearty meal during the week

Ingredients

  • Onion: 1. chopped
  • Carrot: 1. chopped
  • Garlic cloves: 3. chopped
  • Olive oil: 1 oz
  • Eggs: 2
  • Fresh basil: 0.5 oz
  • Salt: 0.2 oz
  • Black pepper: 0.09 oz
  • Ground beef: 32 oz
  • Fresh white Italian breadcrumbs : 1.4 oz
  • Parmesan cheese: 6 oz
  • Marinara sauce: 6 oz

Instructions

    Preheat the oven to gas mark 4,350°F and line a baking sheet with kitchen foil.

    Place the chopped onion,carrot,and garlic cloves into a food processor and pulse. Heat the olive oil in a pan over a medium heat,and add the minced vegetables. Cook until softened after around 5 minutes. Leave to cool slightly.

    In a large mixing bowl,whisk the eggs,fresh basil,salt,and black pepper. Add the ground beef,fresh white Italian breadcrumbs,parmesan cheese,and cooked vegetables to the egg mixture. Mix with clean hands until fully combined.

    Using your hands,mold the meat mixture into an even loaf shape directly on the baking sheet. Spread the marinara sauce evenly over the top. Alternatively,you can use a loaf tin.

    Bake for 70 minutes,until the meatloaf reaches 160°F in the center. Remove from the oven and leave to rest for 10 minutes before serving. Transfer to a cutting board and slice as desired,serving with more marinara sauce over the top if preferred.
