How to make Shepherd’s Pie
Ingredients
- 1 tbsp olive oil
- 300 g ground meat
- 1 cup chopped veggies (carrots, red and yellow peppers)
- 1/2 cup frozen peas
- 1/2 onion chopped
- 1 cup vegetable or beef stock
- 2 garlic cloves
- 1 tbsp Worcestershire sauce
- 1 tbsp chopped rosemary
- 2 bay leaves
- 3 tbsp tomato paste
- Generous pinches of salt and pepper
- 3-4 potatoes (depends on how thick you want the mashed potatoes)
- 1/4 cup milk
- 2 tbsp butter (30g)
- 1 egg yolk
- 50 g grated parmesan
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper

Heat The Olive Oil On Medium Heat And Cook The Onions For A Few Minutes.

Add The Chopped Veggies And Garlic And Cook For Another Few Minutes.

Scoop The Veggies To The Side, Increase The Heat And Brown The Ground Beef For A Few Minutes, Removing Excess Juice.

Mix In The Peas, Herbs, Worcestershire Sauce, Tomato Paste, Salt And Pepper.

Add The Vegetable Or Beef Stock And Simmer For 10 Minutes.

Meanwhile Prep The Potatoes.

Chop the potatoes, place in a big pot and cover with cold water.

Bring to a boil for 15 minutes or until a fork can easily pierce them.

Drain and place in a bowl along with the rest of the ingredients.

Mash until you get a thick texture. In a baking dish, place the beef mix then top with the mashed potatoes.

Sprinkle more parmesan on top and fluff with a fork.

Bake in a preheated oven on 220C for 15-20 minutes or until golden and bubbly.

Garnish with chopped parsley and enjoy warm!
