Ingredients
- 3 cups cooked rice (chilled overnight)
- 3 tbsp salted fish of choice (cooked, cooled & flaked or chopped into small pieces)
- 1 cup cabbage (sliced)
- 1/2 cup fresh or frozen peas (or 2 cups chopped green leafy vegetables of choice)
- 1 tbsp fish sauce
- 1/2 tsp ground white pepper (to taste)
- 1/4 tsp salt (to taste)
- cucumbers (sliced)
- tomatoes (sliced)
- egg (cooked according to preference but I like sunny side up with fried rice)
- salted fish (fried, broken or cut into small pieces, optional)
- crackers of choice (optional, fried, I had some leftover fish crackers)
- spring onion/cilantro/parsley (chopped, optional)

In a large pan or wok on high heat, add oil.

When hot, add processed aromatics & fry till fragrant.

Add salted fish & vegetables, fry for 2 mins.

Add vegetables, fish sauce, pepper & salt, fry for 1 mins.

Add rice, stir continuously & continue frying for another 5 mins till everything is well mixed.

Taste to adjust seasoning & transfer to individual plates.

Garnish, serve warm & enjoy!
