Ingredients

  • 1 chicken, cut it into 10 or 12 pieces
  • 400 ml coconut milk
  • 3 kaffir lime leaves
  • 3 indonesian bay leaves
  • 4 tbsp frying oil
  • Sugar and salt to taste
  • 4 cloves garlic
  • 8 cloves shallots (3 mashed, 5 sliced)
  • 3 cm thick galangal
  • 2 cm ginger
  • 1/4 tsp white pepper powder
  • 1 tsp coriander seeds
  • 1 tsp cumin seeds
  • 4 candlenuts
  • Fried Onion Flakes

    Heat the frying oil on a fry pan. Put mashed ingredients, kaffir lime, and Indonesian bay leaves into the pan, then stir until fragrant. -

    Put the chunks of chicken into fry pan. Stir a bit until all chunks of chicken is covered by the ingredients. -

    Discard the coconut milk. Bring to a boil until the chicken is tender and cooked well. -

    Add the seasonings, stir it well. -

    Served the chicken (opor ayam) with fried onion flakes as its topping.
