Chicken Piccata

How to make Chicken Piccata

Ingredients
- 4 chicken breasts cut lengthwise
- 1 tsp of each salt and pepper
- 1/3 cup flour
- Juice and zest of 1 lemon
- 2 tbsp capers
- 1 cup chicken broth or white wine (or a mix of both)
- 3 tbsp butter
- 2 tbsp oil

Sprinkle salt and pepper on both sides of the chicken.

Coat with flour, shaking off the excess.

On medium-high heat, melt 2 tbsp of butter with the oil and cook the chicken 2-3 minutes on each side until golden.

Cook in batches if needed.

Once done place on a plate and cover in foil.

In the same pan, heat 1 tbsp of butter.

Once melted, add the broth (or wine), lemon juice and zest, and capers.

Cook for 2 minutes and taste to adjust the salt.

Spoon the sauce over the chicken and serve warm with a side of spaghetti. Enjoy!
