How to make Hambagu (Japanese Hamburg Steak)
Ingredients
- 1 large onion (finely diced)
- 3 tbsp oil (divided)
- 340 g ground beef & lamb mixture (ratio of 3:1)
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1/2 tsp nutmeg powder
- 5 tbsp panko
- 4 tbsp milk
- 1 egg
- 1 tbsp butter
- 3 tbsp ketchup
- 3 tbsp Worcestershire sauce
- 2 tbsp brown sugar
- 3 tbsp grape juice or beef stock
- 3 tbsp water

Heat 2 tbsp oil in a large pan over medium heat, add onion, sauté until tender & translucent.

Transfer to a large bowl & let it cool.

Add the rest of the ingredients, mix with hands & knead mixture until it becomes sticky.

Divide meat mixture into 4 equal portions, form into round shaped patties, cover & keep in the fridge for at least 30 mins before cooking.

In a large pan, heat 1 tbsp oil over medium heat, place patties gently, cook until they brown on the bottom (abt 3 mins) flip over & cook for another 3 mins.

Add 3 tbsp grape juice into the pan, reduce heat to low, cover & cook for 5-7 mins to thoroughly cook the inside (adjust cooking time depending on thickness)

Uncover, increase heat to medium to let moisture evaporate & remove from heat.

Combine all the ingredients for the sauce in a small pot, bring to a boil, lower heat & cook until it thickens or reaches desired consistency.

To assemble, place patties on rice, drizzle a generous amount of sauce & serve with a side salad of choice plus miso soup (optional)
