Green bean parcels with spicy Beef Wellington

A festive combination of spicy Beef Wellington with green bean parcels wrapped in prosciutto. An impressive dish that's easier to make than it looks.

  • 500 g ground beef
  • 4 sheets puff pastry
  • 1 egg
  • 1 shallot
  • 1 clove garlic
  • Italian herbs
  • herb butter
  • 500 g green beans, pack of prosciutto crudo (Italian cured ham)
  • 4 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 sprigs fresh rosemary
  • a little lemon juice
  • salt & pepper

    1. Preheat the oven to 200°C. 2. Finely chop the shallot and garlic. Put the ground beef into a bowl with the egg, the shallot, the garlic, Italian herbs and salt and pepper. Mix everything well together using two forks. Place the puff pastry sheets on the counter so they can thaw slightly. 3. Shape the mince into 4 balls, place them on the puff pastry and fold the corners up to the center. Put a generous spoonful of herb butter on top and place the beef parcels in a baking dish. They go into the oven for 25 minutes at 200°C.

    4. Meanwhile, trim the green beans and cook them for 3 minutes in a pan of water with a pinch of salt. Finely chop the needles from 2 sprigs of rosemary and use them to make a dressing from the olive oil, balsamic, lemon juice and salt and pepper. Reserve 1/4 of the dressing and toss the rest with the green beans. 5. Lay the ham slices flat, fill them with a small bundle of green beans, fold them closed and place them in the baking dish. The parcels go into the oven for 11-12 minutes, also at 200°C so they can go in alongside the Beef Wellington.6. Drizzle the remaining dressing over the green bean parcels. Enjoy your meal!
