Potato Flour Mayonnaise (Vegan, Gluten-Free, Nut-Free, Soy-Free)

Ingredients
- 1 1/2 tablespoons potato flour
- 1/4 teaspoon dry mustard
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 1/4 cup cold water
- 3/4 cup boiling water
- 2 tablespoons lemon juice
- 1 tablespoon white vinegar
- 1/2 cup oil

In a small saucepan, whisk together the potato flour, sugar, salt, and dry mustard. Add the cold water, and whisk until the dry ingredients are dissolved.

Whisk in the hot water, and place the pan over medium heat. Cook just until the mixture is clear, a few minutes.

Let the mixture cool to lukewarm.

Slowly drizzle in the oil while beating with a mixer. Beat in the lemon juice and vinegar and continue to mix until the mixture is creamy, like mayonnaise!

Store it in an airtight container in your refrigerator for up to 1 week.
