Salad with pearl couscous, halloumi and grapes

This colorful salad combines tender pearl couscous with grilled halloumi and sweet red grapes on a bed of arugula. A quick and tasty everyday meal.
Ingredients
- 200 g pearl couscous
- 1 block halloumi, sliced into 3 pieces
- 50 g arugula
- a handful of red grapes
- olive oil
- balsamic vinegar
- freshly ground pepper & salt
- dried oregano

Cut the halloumi into three slices, place them in a small bowl, pour a few generous glugs of olive oil over them (so they’re slightly submerged) and mix in about a tablespoon of oregano. Let this marinate for about 10 minutes. Meanwhile, cook the pearl couscous for 12 minutes, drain it and season with pepper and salt. Toss the arugula and pearl couscous together in a bowl. Grill the halloumi until both sides are nicely browned. Wash and halve the grapes and serve the pearl couscous/arugula with the halloumi, garnished with the grapes. Enjoy!
