Beetroot and apple salad

A colourful, healthy salad with beetroot, lamb's lettuce and apple, finished with a delicious dressing of balsamic, horseradish and honey. Quick to make and full of flavour.
Ingredients
- 1 cooked beetroot
- lamb's lettuce
- 1/2 apple
- a handful of seeds and kernels (sold mixed at the supermarket)
- salt & pepper
- olive oil
- balsamic vinegar
- horseradish (the spreadable type, from a jar)
- honey
Instructions

Fill your plate with lamb's lettuce. Slice the beetroot (I prefer them thin) and spread them over the greens. Peel the apple, cut it into cubes and place over the beets. Season everything with salt and pepper and sprinkle on the seeds and kernels. For the dressing, put 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, a teaspoon of horseradish and a drizzle of honey in a small bowl. Give it a quick stir and pour over the salad. Tadaaa! A super tasty salad is ready =DA chef friend suggested crumbling some feta on top. I didn't have any at home, unfortunately, but it sounds lovely. Enjoy!
