Banana Bread with Honey and Walnut

This gluten-free banana bread made with coconut flour, honey and walnuts is quick to make and deliciously moist. Perfect as a healthy snack or a sweet breakfast.
Ingredients
- 100 g coconut flour
- 2 eggs
- 2 bananas
- 1 tsp baking powder
- 2 tbsp honey
- 2 handfuls walnuts, roughly crushed by hand
- 50 g coconut oil, melted
- a pinch of vanilla powder
- 1 tsp cinnamon
- a pinch of salt
- a generous splash of rice milk
- butter or oil for greasing the pan

1. Preheat the oven to 180°C and grease the loaf pan. 2. Mash the bananas in a mixing bowl until there are no lumps left and stir in the eggs. Stir in the melted coconut oil, vanilla and honey. Now add the coconut flour, baking powder and a pinch of salt and mix everything together. Add a generous splash of rice milk to make the mixture a bit moister. Finally, stir in the roughly crushed walnuts and pour the batter into the loaf pan. It's a fairly thick batter, so spread it evenly. 3. Bake for 20–25 minutes. Check with a skewer to see if the banana bread is done: when the skewer comes out clean, it's ready. Enjoy!
