  • 8 large Russet Potatoes1 yellow onion- chopped (about 1 cup)olive oil2 cloves of garlic- minced4 TBSP butter3 TBSP gluten free flour2 Cups Whole Milk1 Cup Heavy CreamSalt and White Pepper1 1/2 Cups Dubliner Cheese Shredded1 1/2 Cups Gruyere Cheese Shredded1/4 Cup of Parmesan Cheese ShreddedChives Parsley1/2 Cup Gluten Free Breadcrumbs

    --- Preheat your oven to 375 degrees.Spray a 9 x 13 pan with cooking spray or rub it with olive oil.In a deep-sided pan, saute the garlic and onions in olive oil.Cook them until they are soft.Add in the butter.Stir it until it melts. Add in the flour and whisk until combined.Cook it for a few minutes while stirring.Add in the cream and milk. Whisk.It will start to become thick.Add the cheese, except the parmesan, and continue to whisk until it is melted and combined.Set aside.Peel the potatoes and slice them with a mandolin or food chopper.Layer the potatoes in the baking dish.Season with salt and pepper.Cover with a layer of cheese sauce.Repeat until all of the potatoes and cheese sauce are in the pan.Top with shredded parmesan and breadcrumbs.Cover the pan with foil.Bake for 30 minutes covered. Remove the foil and continue to bake for 20 more minutes.The top should be brown and the sides bubbly with cheese sauce.Garnish with chives and fresh parsley before serving.Enjoy! ---
