Healthy chocolate cake with strawberries

This healthy chocolate cake has a rich nut-and-date crust, filled with fresh strawberries and topped with a creamy avocado-cacao frosting. Completely no-bake, yet irresistibly delicious.

Ingredients

  • For the base:
  • 200 g pecans
  • 100 g raw cashews
  • 200 g almonds
  • 180 g raisins
  • 18 Medjool dates
  • 90 g raw cacao powder
  • a box of fresh strawberries
  • For the frosting:
  • 2 ripe avocados
  • 2 ripe bananas
  • 12 Medjool dates
  • 40 g raw cacao powder
  • 2 tbsp coconut blossom sugar
  • 1 tsp ground vanilla

    1. Pit the dates, put all the ingredients for the base (except the strawberries) into the food processor and blend until there are almost no pieces left. Remove the dough from the machine and knead it into two round balls. Place the balls on a sheet of parchment paper and use a rolling pin to flatten them into two equal, round discs. 2. Wash the strawberries and slice them. Top one layer with the strawberries (leave about 0.5 cm from the edge) and place the other layer on top. Do this carefully because the dough can fall apart quickly.3. Put all the frosting ingredients into the food processor and blend until you have a smooth mousse. Spread a thick layer of frosting over the cake, covering the sides as well. You can now decorate the cake. I used some fresh strawberries on top. If Mom isn't happy about this… =D
