How to make Sweet Sour Fish

Ingredients

  • 650 gr dory fish fillet, cut into bite size pieces
  • 1 1/2 tbsp cornflour
  • 1 large egg
  • 1 1/2 tbsp minced garlic
  • 1/2 tbsp minced ginger
  • 1 larga bell pepper, chopped
  • 150 gr pineapple, chopped
  • 1/2 medium onion, wedges
  • Oil for deep fry
  • 3 tbsp oil
  • 1 tbsp Hoisin
  • 2 tbsp soy sauce
  • 1/4 cup honey
  • 1/4 cup rice vinegar
  • 3 tbsp ketchup
  • 1 tbsp chili sauce
  • 1 tbsp cornstarch
  • 1 tbsp oyster sauce
  • 1/3 cup Water
  • Chopped scallions
  • Sesame seed
  • Sliced cucumber

    Marinate fish with the marinations. Set in the fridge while prepare other ingredients

    Combine sauce ingredients. Set aside

    Combine flour mixture in a container. Set aside

    Take out the fish from the fridge, add cornflour and eggs. Combine and mix evenly

    Heat good amount of oil in a deep pan. Add fish into the flour mixture (few pieces at a time), close and shake to coat. Over medium to high heat, fry fish in few batches until golden brown about 5 mins. Do not over crowd the pan. Drain excess oil over a wire rack

    Heat 3 tbsp of oil in a wok or a large pan, over high heat, stir fry garlic and ginger until golden

    add onion and bell pepper, stir fry briefly for 15-30 secs then add sauce mixture

    let it simmer until the sauce thicken, quickly stir in pineapple and fried fish

    toss to combine and coat well with the sauce.

    Off the heat and Serve it with rice
