Gluten Free Sausage Stuffed Mushrooms

Ingredients

  • 2 lbs Ground Pork Sausage I used a breakfast blend1 Sweet Yellow Onions Chopped1 Red Onion Chopped1 Garlic Clove Chopped2 Green Onions Chopped1 8 oz pkg Cream Cheese softened1 8 oz pkg Raw Cheddar Cheese Shredded1 Large Pkg of mushrooms. I mix portobello and white. Try to choose large caps for more stuffing 1 Red Pepper Chopped1/4 cup White or Rose Wine

    --- Wash and dry mushrooms. Remove stems and set aside.In a large pan, saute onions and pepper over medium heat with a little olive oil.Add chopped mushroom stems.Add Garlic and continue to saute.Add ground pork and cook it until it's done. Mix with the cooked veggies.Add the cream cheese and stir to combine.Add the shredded cheddar and stir to combine.Turn off the heat when the cheese is melted in.Place caps on a baking sheet. Spoon in the filling.Pour the wine into the bottom of the pan and cover it with foil.Bake in a 375-degree oven for about 15 minutes.Remove the foil and turn the oven on to broil. Broil for a few minutes to crisp up the top of the mushrooms.Remove and Serve and ENJOY! ---
