Vegan sushi bowl

This vegan sushi bowl combines brown rice with roasted shiitakes, fresh avocado and crunchy vegetables. A quick and healthy meal full of Asian flavours.
Ingredients
- 150 g (short-grain) brown rice
- 1 tbsp sesame oil
- 150 g fresh shiitakes, sliced (or 50 g dried shiitakes; if using dried, soak them in warm water for 8 hours)
- 1 tbsp soy sauce
- 1 avocado
- 2 spring onions
- 2 nori sheets
- 1/2 cucumber
- 10 radishes
- 2 tbsp sushi ginger
- 2 tbsp toasted sesame seeds

1. Cook the rice according to the package instructions and drain as soon as it's done. Meanwhile, slice the shiitakes into strips, cut the avocado into pieces, slice the spring onions into rings, slice the radishes and dice the cucumber. Cut the nori sheets into 1 × 1 cm squares.2. If you're using dried shiitakes, drain them now. Heat the sesame oil and fry the shiitakes for 1 minute. Add the soy sauce and cook for another minute. Turn off the heat and let the shiitakes sit in the pan for a little while.3. To make the dressing, mix all the ingredients in a small bowl. Set aside a few spring onion rings and shiitake strips to use as decoration. Take a nice serving bowl and mix all the ingredients except the sesame seeds together. Pour the dressing over the salad and toss well. Divide between two bowls and garnish with the spring onions, shiitakes and sesame seeds. Yum!
