Sweet potato soup

This sweet potato soup is packed with flavour thanks to red onion, carrot, bell pepper and a hint of cayenne. In under an hour you'll have a delicious, velvety soup on the table.

Ingredients

  • 1 large sweet potato
  • 2 red onions
  • 2 large carrots
  • 3 cloves of garlic
  • 1 red bell pepper
  • 2 vegetable stock cubes
  • 750 ml water
  • olive oil
  • 1 tsp cayenne pepper
  • pepper & salt
  • crème fraîche or quark (optional)
  • parsley or basil (optional)

Instructions

    1. Peel the onions and finely chop them. Crush the garlic cloves, remove the skins and finely chop. Wash the sweet potato, carrot and bell pepper and cut into chunks.2. Heat a good glug of oil in the pan, gently fry the red onion and then add the garlic. Add the sweet potato, carrot, bell pepper and cayenne pepper, and cook for about 5 minutes.3. Crumble the stock cubes into the pan, add the water and bring to the boil. Reduce the heat and let everything simmer for 20 minutes.4. Turn off the heat, blend the soup with a stick blender until smooth and velvety, then taste and season with pepper and salt if needed.5. Serve the soup with a sprig of fresh herbs and optionally a dollop of crème fraîche or quark. Enjoy!
