Ingredients

  • 1/2 cup dried mung beans
  • 2 cups water
  • 1 tbsp oil
  • 1/2 tsp cumin seeds
  • 1/4 tsp mustard seeds
  • 10 curry leaves
  • 1 cup onion (finely diced)
  • 1 green chilli (sliced)
  • 1/2 tsp ginger (grated)
  • 1/2 tsp garlic (grated)
  • 1/2 tsp chilli powder
  • 1/4 tsp turmeric powder
  • 1/4 tsp coriander powder
  • 1 cup tomatoes (finely diced)
  • 1/2 tsp garam masala
  • 1 tsp salt
  • 1 tbsp lemon juice

    Wash & soak dried mung beans for 4 hrs.

    Heat a pot on medium high heat & add oil.

  4. 4

    When hot, add cumin & mustard seeds, when they start to pop, add curry leaves & stir for 30 secs.

    Add onion & chilli, cook till onion turns translucent.

    Add ginger & garlic, cook for 1 min then add chilli, turmeric & coriander powder, stir well.

    Add mung beans & tomatoes, cook for 15-20 mins.

    Add salt & cook until beans are tender & gravy reaches desired consistency.

    Add garam masala, lemon juice, stir, taste to adjust seasoning & remove from heat.

    Garnish with cilantro or parsley just before serving with roti or rice.
